By focusing on quality and hygiene Zandbergen Vleeswaren is able to operate in accordance with a high level of certification (BRC, IFS, QS, Organic and the "Beter Leven" hallmark) and to work cost-efficiently. This efficiency is achieved by mechanising and automating the production process wherever it is possible to do so.

Precooked Crispy Bacon

Our premium quality precooked Crispy Bacon Slices and flakes are salted, dried, traditionally beechwood smoked, precooked and (IQF) packed. Our high-tech slicer allows us to guarantee a fixed average slicing weight per slice. Because we don't deep-fry or microwave our bacon, the slices are equally cooked, juicy and full of taste. Adjusting the cooking temperature and/or cooking time has resulted in the slices being available in different varieties.

We can offer you a tailor made product, based on your cooking grade (yield), packaging, cut and (private) labelling requirements. We can also offer standardised yield and packaging, in addition to our tailor made products.

Our premium quality precooked Crispy Bacon Bits and Crispy Bacon Lardons are salted, dried, traditionally beechwood smoked, precooked by a Teflon oven and (IQF) packed. The Teflon cooking technique ensures the Bits and Lardons are crunchy, juicy and extremely tasty. Adjusting the cooking temperature and/or cooking time has resulted in the Bits and Lardons being available in different varieties.

We can offer you a tailor made product, based on your cooking grade (yield), packaging and (private) labelling requirements. We can also offer standardised yield and packaging, in addition to our tailor made products:

Fully cooked

Medium cooked
The crunchy and juicy medium cooked Crispy Bacon Bits / Crispy Bacon Lardons are ready to eat, but can be reheated too and are perfect for ready meals, soups, spreads, as a topping or in a bake-off product (pizza, bread, omelette). Private labelled in retail, foodservice or industrial packaging, fresh or IQF Frozen.

Method

Packaging types

Even though the specialisation is in a single product group, Zandbergen works with a wide range of SKUs. These range from 50 gram MAP-packaged consumer trays, to heavy bulk packaging weighing 15 kilos, for industrial customers.

Through the presence of 20 different packaging lines, Zandbergen Vleeswaren can always offer its customers an appropriate form of packaging in MAP, vacuum or bulk packaging forms.

Private label

Over 95% of the products are provided with a "Private Label" (a so-called white label) by means of a printed foil or full colour (imprinted) label.

Partly due to the wide range of packaging and labelling options, temporary products are regularly packaged as in-out special offers, this is also the case when, for example, a different portion size is provided with a temporary label on the occasion of an anniversary, public holiday or a special event.

Maximum shelf life but a service level score of 100% is the standard

Zandbergen Vleeswaren BV operates in accordance with a "Just In Time" production method, and for this reason does not keep End products in stock.

Nevertheless Zandbergen Vleeswaren BV enjoys a service level score of 100% with all of its (inter) national clients. The process of product manufacture only gets underway after receipt of the order. Despite the fact that no end products are kept in stock, Zandbergen Vleeswaren BV is able to work according to a short lead time for most products. This means the products received by customer and end user benefit from an increased maximum shelf life because everything is absolutely fresh upon delivery!

History and Future

Historie In 1984, butcher's son Erik Zandbergen senior, used the proceeds from the sale of his butcher's shop and started the company "Zandbergen & Zonen Vleeswaren" with his two sons Erik junior and Robert, at the Jan van Krimpenweg, in Haarlem.

The trio has been specialising in the processing of (cut) bacon products since 1987. Opting for specialisation was a correct decision as became evident when the new venture's success resulted in the production premises soon becoming too small. The profit generated was invested in the company and as a result of this it doubled in size to approximately 2.900 m2 in the period 1990 to 2000.

The growth of Zandbergen Vleeswaren BV continued and for that reason the expansion possibilities on that particular plot of land needed to be, and were, used to maximum capacity. In order to realise further expansion the adjacent premises (2.300 m2) were purchased in 2006 and then completely rebuilt. The property was purchased as a direct result of the demands growth brought, but the new premises soon turned out to be used to maximum capacity as well.

The departure of the neighbour, situated to the rear of Zandbergen's company premises, opened up new possibilities for expansion. Continued growth in 2009 led to the building of an additional 2.500 m2 of production space.

The question of further future expansion is particularly topical. In the summer of 2015, Zandbergen Vleeswaren BV will be launching a newly built production location (adjoined to the existing premises) with a surface area of 13.000 m2.

Production Method

Procurement

Bacon products are single products and this is one of the reasons why it is very important for strict checks to be performed when receiving raw materials, pork bellies, etc.

After all, if bellies of pork are not delivered in accordance with the given specifications, the consistency of the end product cannot be guaranteed. In order to achieve a consistent and high-quality end product Zandbergen Vleeswaren BV purchases its pork bellies exclusively through certified slaughterhouses from the EU15 Member States and Zandbergen itself takes responsibility for auditing these. The bellies are purchased in accordance with Zandbergen's own specifications. This is to say, Zandbergen Vleeswaren provides its suppliers with specific instructions concerning which characteristics the bellies must have and this is done on the basis of the intended end product (bacon strips, breakfast bacon, fried bacon, etc). This includes the cutting technique, the meat to fat ratio and/or the thickness and width of the belly.

Curing Process (brining)

After a consignment of pork bellies has been received, checked and approved, the bellies are pickled in a brine mixture which is selected to meet the end product requirements.

A pickle mixture consists of water, salt and additives, the so-called E-numbers. The pickling process means taste, shelf life and colour stability can all be guaranteed. Zandbergen continues to focus and pay attention to emerging (technological) developments and as a result of this alternative ingredients/additives and production methods are regularly examined.

Smoked Over Beechwood

To give its bacon products its very distinctive smoky flavour, all end products (with the exception of sauerkraut bacon of course) are traditionally smoked over beechwood after pickling.

The bellies are placed in a smoke house for a few hours during this traditional production process and the bellies lose much of the water added during the pickling process and the bellies then acquire the characteristic deep red colour.

Cutting, packaging and logistics

After pickling and smoking has been completed the bellies are ready to be cut into strips, dice or slices and then packaged. A large proportion of our packaging lines are operated "in-line", this is to say that the pickled and smoked bellies are cut/sliced, packed and labelled on one of the many packaging lines, where the choice of packaging line depends on the customer-specified packing requirements.

Packaging methods include: MAP/vacuum, consumer packaging; mono/duo/triple, HoReCa (hotel, cafe & restaurant) packaging or industrial packaging (bulk). After packaging, the products are largely automatically placed in boxes or (CBL) crates and after these have been subjected to a visual inspection they are placed on a pallet to be transported to the customer/end user the following day at the latest.

Fried bacon

The end product (fried breakfast bacon or fried bacon slice or strips) determines the method of frying. After carrying out various tests, frying in combination with hot air was chosen for the preparation of the fried breakfast bacon.

By heating the product in a dry manner from the outside the fried breakfast bacon becomes crispy but not dry. The fried bacon strip(s) are baked exclusively on Teflon. Frying the bacon strip(s) in their own fat maximises the taste experience since all of the flavour is retained. The degree of crispiness is determined by adjusting the end product's frying time. The longer the product is fried the crispier the product will become.

Besides the sensory characteristics, the frying time also determines the price of fried bacon. Zandbergen Vleeswaren has standardised various baking time on the basis of the intended end use. Any excess fat is blown off the product by means of powerful "air knives" after baking, after which the slices of bacon or strip(s) are manually selected and packaged.
